The tortelloni? Another story …
Tortelloni - in Bologna they are also known as Balanzoni, with mortadella and ricotta filling - are larger than tortellini and can have different fillings that often depend on the season.
At the Osteria del Podestà you can find tortelloni stuffed with ricotta and mortadella, or stuffed with pumpkin or ricotta, walnut and gorgonzola. Everything depends on the ingredients offered by the season and on the creativity of our chef.

Traditionally, the tagliatelle are yellow pasta seasoned with ragù, but they are not the only ones!
Sometimes they can be green and the curiosity is that nettle is often used to give them a dark green color.
They can also be thinner than traditional ones, in this case they are called "Taglioline" or "Tagliolini".
Instead of ragù there can be ham, mushrooms, truffles, salmon and much more.
The seasoning varies according to the season and the creativity of our cook.
