amarone The grapes that, thanks to the extraordinary position and the good ventilation, can reach the ripening in the fullest and complete health, are stored in crates and allowed to wither in a structure located at 300 meters above sea level where the favorable climatic conditions allow to pursue a natural withering according to the dictates of ancient tradition that has always been able to raise the basic characteristics Of these grapes: spice and fruit.
To obtain the maximum expression and complexity, the drying continues until the optimal parameters are reached, after that date the traditional fermentation in red is carried out with a mixed technique of remounting and delastage. The fermentation period due to the low temperature of the cellar in the period and the high concentrations of fermentable sugars lasts a long time and at the end of which after a few days of maceration on the skins is passed to svina and to the placing in small barrels.
The wine is subjected to aging continues for about 1 year in small wood and then passes to a blend in large cask. The exceptionally low pH, for a wine of this structure, gives Amarone Torre d'Orti a deep and bright color and an extraordinary drinkability. Despite alcohol, structure and fine tannins make this wine complex and balanced with a remarkable aging capacity and great evolutionary potential.
The bouquet is complex and deep: spice, pepper, cherry are combined in a unique way, making the grapes, the traditional technique and the area of origin identifiable.

Amarone della Valpolicella, usually known as Amarone  is an Italian DOCG denomination of typically rich dry red wine made from the partially dried grapes of the Corvina (45–95%, of which up to 50% could be substituted with Corvinone), Rondinella (5–30%) and other approved red grape varieties (up to 25%).
